Manipulating Interfaces – Applying fundamental interfacial theories to complex problems

Soft matter physics is the study of materials that are easily deformable, such as polymers, liquid crystals and biological tissues. Insights into the properties of emulsions, foams, suspensions, liquid marbles, granular matter and dry liquids all rely on one fundamental principle – the ability to understand interfaces. Traditionally interfaces are stabilised by surfactants, but they can also be stabilised using suitable particles. This talk will explore what makes a good particle stabiliser, and how we can use particle stabilised interfaces to overcome surface tension resulting in non-spherical emulsions. Furthermore, how we can use these particle-stabilised emulsions as a template for encapsulation of important molecules such as fragrances, medications and larger molecules for targeted delivery and release.
